Boiled Kale

Background

Kale has been in Europe for at least 4000 years and grown in cottage gardens.  It was so abundant, kale was used to feed livestock and was associated with Irish (and Scottish) peasants.  Kale is a sturdy plant, easy to grow and can survive the snow and frost. It has only been in recent years that kale has become easy to find and its high nutrient content popularized.

Pictures here are of baby kale which cooks in less than a minute. For a more hardy recipe, use adult kale.  This is a great accompaniment to meat and provides a nice balance with rich sauce dishes.

Kale

Salt/pepper/butter to taste

Step-by-Step

  • Wash and chop up a bunch of kale removing stems. 
  • In boiling water (about 5 cups if using adult kale), add kale and salt to taste.
  • Cook until tender then strain water.  (for baby kale cook for about 1 minute; for mature kale it can take between 5-25 min, depending on the variety).
  • Add salt, pepper and butter to taste.
