Rarebit

Background
This classic Welsh dish has been eaten since at least the 1500's and was called "caws pobi" ("toasted cheese" in Welsh). The first recorded reference to the dish is from 1725 where it was called "Welsh rabbit." It is believed to be a humorous play on words. Welsh Rarebit does not contain any meat, including rabbit! Today, the dish is enjoyed throughout Wales.
